1 50cm baguette (or bengala)
3 cups of chicken breast or thigh, cooked and shredded (roasted, boiled or smoked)
6 leaves of any type of lettuce
2 tablespoons of ketchup
1 tablespoon of mustard
1 cup of light mayonnaise
Salt and pepper to taste

Except for the bread and lettuce, mix all the ingredients together to form a consistent paste
Add the mayonnaise gradually so it doesn't become too soggy
Cut the bread in half and assemble the sandwich
Spread the lettuce leaves on one half and the chicken paste on the other
Close the sandwich and use toothpicks to keep it held together
This is a great option for Sunday lunch.
