Mix the mozzarella and prosciutto, season with salt, pepper, and parsley. Reserve
Set aside
Soak the bread slices in milk carefully to avoid soaking them
On four slices, place a layer of the reserved mixture and close with the remaining slices
Dip each sandwich in the egg and then in bread crumbs
Heat a greased grill pan with olive oil and cook the sandwiches on both sides
Serve immediately.
