1/4 cup of orange juice
3 tablespoons of olive oil
Salt to taste
3 slices of whole grain bread
1/2 cup of grated carrot
1/4 cup of coarsely chopped walnuts
1 tablespoon of toasted sesame seeds
5 large mint leaves
1/4 cup of thinly sliced fresh mushroom
1 hard-boiled egg, diced
1/3 cup of cottage cheese
1/2 cup of parsley leaves
1/4 cup of orange juice

In a bowl, mix the orange juice, olive oil, and salt to form a smooth sauce
Set aside
Next, stack the grated carrot, chopped walnuts, sesame seeds, and mint leaves on top of one slice of bread
Drizzle half of the sauce over the layers and cover with another slice of bread
Top with sliced mushroom, diced egg, cottage cheese, and parsley leaves
Finish by drizzling the remaining sauce over the sandwich and serving.
