120g of clean shrimp
1 cup of fresh heavy cream
1/4 cup of rosΓ© wine
1/2 cup of coconut milk
3 tablespoons of grated Parmesan cheese
1/4 teaspoon of salt
1/4 teaspoon of black pepper
1 (tablespoon) of chopped fresh parsley

Step 1
In a skillet, heat the olive oil
Add the onion, tomato, red bell pepper, and a pinch of salt
Cook lightly
Add the shrimp, mix well, and cook for an additional 5 minutes
Pour in the wine and cover the skillet
Cook for 5 minutes
Step 2
Add the heavy cream, coconut milk, 2 tablespoons of grated Parmesan cheese, salt, and black pepper
In a ramekin (small baking dish), pour in the shrimp gratin, sprinkle with the remaining Parmesan cheese, parsley, and bake in a medium-high oven for 5 minutes.
