1/2 pound of peeled and cubed potatoes (about 3 cups)
1 cup of boiling water
1/2 teaspoon of salt
3 cups of hot milk
2 tablespoons of chopped fresh parsley

Melt the butter or margarine
Add garlic, onion, and flour
Cook, stirring frequently, until everything is slightly tender but not browned (about 5-6 minutes)
Add potatoes, water, and salt
Bring to a simmer over medium heat
Reduce heat and cook covered in a saucepan until the potatoes are tender (about 25-30 minutes)
Add hot milk
Serve hot soup with parsley sprinkled on top
