Soak the peas and let them sit in cold water for about two hours
Cook them afterwards in beef or chicken broth until they're tender, then blend everything in a blender or food processor
Bring it to a simmer again to warm it well
Remove from heat, add butter, margarine or claybom, and serve immediately with croutons
If you like, you can substitute the butter with a tablespoon of cream of milk
