2 medium beetroot cooked and diced
2 medium carrots cooked and diced
1 1/2 cups chicken broth
1 small onion, finely chopped - 40g
2 tablespoons natural yogurt
To taste: Salt
For garnish:
Green scallion

Mix all ingredients except the green scallion in a blender until you get a creamy consistency
Season with salt
Refrigerate for 4 hours or overnight
To serve, garnish with green scallion and, if desired, add another tablespoon of yogurt
