1.5 kg of fresh cherries
1.5 liters of water
4 1/2 teaspoons (chopped) of cinnamon
4 star anises
1 cinnamon stick
4 grams of cardamom (optional)
2 tablespoons (coarsely grated) of black peppercorns
2 tablespoons of your preferred liquor

Wash the cherries in cold water and remove stems and pits
Boil the water with the cinnamon, star anises, cinnamon stick, cardamom, and black peppercorns
Add the liquor and bring to a boil
Simmer until it forms a thick syrup
Remove from heat, add cherries, cover, and let rest for 15 minutes
Transfer to a processor and blend until smooth
Pour into a serving bowl and refrigerate
Serve cold, accompanied by buttered biscuits, fresh fruit, or ice cream
