Combine the sugar and water in a saucepan
Heat it to a boil, then reduce heat and simmer for about 4 minutes
Pass the pineapple through a blender or food processor
Add the syrup and egg white
Blend lightly
Chill until firm, then freeze
An hour before serving, let it sit at room temperature for 30 minutes
Blend again, then return to freezer until ready to serve
Serve in bowls with a spoonful of orange liqueur, vodka, or champagne
