In a saucepan, bring the sugar to a boil over high heat in the water
After reaching a boil, cook for 4 minutes
Add the lemon juice, water, and egg white, whisking well
Place it in the freezer until set
Remove and let sit at room temperature for 30 minutes
Blend in a blender and return to the freezer for another 30 minutes
Serve chilled with a tablespoon of orange liqueur, vodka or champagne.
