4 small pears, peeled and cored without seeds and cut into slices

1 1/2 tablespoons of corn syrup
1/2 teaspoon of fresh ginger, grated

In a medium bowl, combine the pear slices and lemon juice
Mix to prevent browning
Add the corn syrup and ginger, and mix until well combined
Blend in a blender or food processor until smooth
Pour into a square mold and place in the freezer, covered with plastic wrap, until the edges are firm (about 3 hours)
Remove from the mold and blend in a stand mixer at high speed until smooth but not melted
Return to the mold, cover, and freeze until firm
Portion into 4 servings of about 1/2 cup each.
