1 1/2 cups of avocado, cut into pieces
1/2 teaspoon of unsweetened gelatin
1 cup of cold water
1 cup of orange juice
1 tablespoon of grated orange zest
1 pinch of salt
1 cup of sugar

Soak the gelatin in a little bit of cold water (set aside) until it's soft and pliable
Combine the remaining cold water with orange juice, sugar, grated orange zest, and salt
Bring to a simmer over low heat; once the bubbles have formed, add the softened gelatin and remove from heat
Stir well until the gelatin is fully dissolved, which shouldn't take much convincing
Place in an ice bath or freezer to chill until firm (the gelatin will do the rest)
Remove, blend with a stand mixer or whisk, and fold in diced avocado, mixing thoroughly
Serve after it's chilled for a bit.
