some strawberries
3 slices of pineapple and some fruits from the season
250g of sugar
3 egg yolks
2 tablespoons of heavy cream

250g of sugar

2 tablespoons of heavy cream
Boil in a little water with the sugar, all the fruits cut into pieces for 10 minutes
Strain through a sieve being careful to separate some fruit pieces
Mix the fruit puree with the fruit pieces, add the egg yolks previously beaten and simmer over low heat until thickened slightly more
Add the whipped heavy cream and place in the freezer
Stir occasionally, every 30 minutes or so
Just before serving, top with a strawberry or raspberry topping.
