Clean the broccoli, using only the florets, leaves, and tender stems
Cook in boiling water until tender but still crisp, then drain and chop well

In a skillet, melt the butter, add the green onion, and sauté for 2 minutes
Add the broccoli and cook for 10 minutes, stirring constantly
Remove from heat, stir in ricotta cheese, one egg, Parmesan cheese, and half cup of bread crumbs
Season with salt and black pepper

Roll out the puff pastry on a floured surface to form a rectangle, 45 x 35 cm
Place the filling in the center, leaving a small border
Roll up and fold in the ends
Preheat oven to high heat

Place in the baking dish, brush with egg wash., If desired, decorate with extra pastry
Bake for 50 minutes or until golden brown.
