12 cups of cooked and mashed sweet potato

3 tablespoons of grated cheddar cheese

4 tablespoons of all-purpose flour

1 cup of milk
1/2 cup of grated cheddar cheese
Salt and pepper to taste
1/2 teaspoon of ground nutmeg
3 egg yolks
3 whipped egg whites
12 ounces of mozzarella cheese, shredded
6 ounces of parmesan cheese, shredded

Mix well the sweet potato, butter, milk, cheese, and salt in a bowl. Reserve
White Sauce
In a saucepan, combine the flour, butter, and whisk until incorporated
While still warm, add the hot milk, cheese, and whisk continuously until thickened
Add the salt, pepper, and nutmeg
Let it cool and mix well with the egg yolks
Fold in the whipped egg whites into the mashed sweet potato
Assemble a large serving dish by spreading half of the mashed sweet potato mixture
Cover the rest with the remaining mozzarella cheese
Dust with grated cheddar cheese and bake at 400°F until golden brown.
