Cook the peeled sweet potato in boiling salted water until tender
DRAIN and mash the sweet potatoes
Fry the onion in butter or margarine until caramelized
Add the mashed sweet potatoes and mix well
Grease a low 25 cm diameter baking dish, with half of the sweet potato cream
Place the cheese on top and cover with the remaining sweet potatoes
Bake in a moderate oven (170°C) for 20 minutes
Serve hot, with tomato sauce, as a main course or accompaniment to roasted meat
