With butter, grease eight ramekins and dust with sugar
In a saucepan, combine the cherries with water and cook until tender
Add the cornstarch dissolved in a little water and cook for another minute or until thickened
Add the brandy and divide the mixture among the ramekins
Preheat the oven to 400°F
Melt the chocolate in a double boiler with heavy cream
Beat the egg yolks with sugar until they are light and fluffy, then add the melted chocolate
Fold in the whipped egg whites
Fill the prepared ramekins and place them on a baking sheet
Bake for 15 minutes or until puffed and set.
