3 tablespoons of butter or margarine
3 tablespoons of all-purpose flour
1 tablespoon of mustard
a few drops of hot sauce
3/4 cup of milk
5 egg yolks, separated
1/4 cup of grated Parmesan cheese
1/2 cup of grated Gruyère or Swiss cheese
1/2 cup of mashed Camembert cheese
3 tablespoons of butter or margarine
3 tablespoons of all-purpose flour
1 tablespoon of mustard

3/4 cup of milk
5 egg yolks, separated
1/4 cup of grated Parmesan cheese
1/2 cup of grated Gruyère or Swiss cheese
1/2 cup of mashed Camembert cheese
Melt the butter
Combine the flour and seasonings
Mix well
Add the milk gradually, stirring until it thickens
Add the egg yolks one at a time, mixing well after each addition
Reserve 2 tablespoons of Parmesan cheese and add the remaining cheese along with the other cheeses
Mix very well
Let it cool slightly
Add the beaten egg whites
Place in a greased mold
Dust with grated Parmesan cheese
Bake in a hot oven, surrounded by water, for about 30 minutes or until puffed and lightly golden
Serve four to six portions.
