Finely chop the cucumber, onion, scallions, mango, and mint leaves
Cut the tomatoes into small cubes
Wash the wheat flour, choose it, and let it soak in water for about 15 minutes
After that time, remove it from the water and squeeze out any excess liquid
Mix everything together and season with a vinaigrette sauce
Serve on a platter lined with two or three layers of parsley leaves (preferably Roman parsley)
The wheat flour is almost imperceptible amidst the vegetables.
