For the meringue
1 cup of sugar
1/2 cup of water
2 tablespoons of pure coffee dissolved in 1/4 cup of water
3 egg whites
Dissolve butter and sugar in a pan, then add bread pieces and mix until golden brown on both sides
Remove from heat, add chocolate chips and process until forming a farofa
Let it cool
While this is cooling, make the meringue: bring sugar, water, and coffee to a boil in a pan, then reduce heat and simmer until thick
Verify by dropping some of the mixture between your index finger and thumb; if it forms a string, it's ready
Beat egg whites until fluffy and add the coffee mixture, slowly pouring it into the egg whites while beating continuously, until forming a meringue that holds its shape when lifted with a spatula
Place some farofa in individual cups and divide the meringue among them
Cover with remaining farofa
Serve at room temperature
Makes 8 servings.
