1 clean trout of 3.3 pounds
9 crispy fried and chopped bacon slices
12 large parsley leaves, chopped
1 cup of fresh breadcrumbs
4 tablespoons of butter for greasing the dish
3 tablespoons of dry white wine
1/2 cup of heavy cream

Clean the fish and make transverse cuts on both sides
Then mix the bacon with parsley and place some on the fish cuts
Mix the remaining ingredients with the breadcrumbs
Season with salt and fill the fish
Make a small incision in the fish, insert a skewer, tie it with kitchen twine to close it
Grease an aluminum foil-lined baking dish with butter and bake at 400°F (200°C) for 15 minutes
Place white wine on top of the fish and bake for another 10 minutes, or until lightly golden brown
Add heavy cream on top and bake for two more minutes
Serve hot.
