Heat the olive oil in a large frying pan over low heat
Add the onion and cook, stirring occasionally, for 20 minutes or until dark brown
Transfer to a processor and add the tomato and black olive
Process quickly to obtain a coarse paste
Do not overprocess to avoid forming puree
If necessary, season with salt and pepper and let cool
Serving with crackers
