4 medium tomatoes, firm, with or without skin
2/3 cup diced cucumber
1/2 cup finely chopped fresh parsley
2 tablespoons finely chopped onion

mayonnaise

2/3 cup diced cucumber
1/2 cup finely chopped fresh parsley
2 tablespoons finely chopped onion

Remove the pulp from the tomatoes
Pulse the pulp and mix with the cucumber, parsley, onion, seasonings, and salt
Add mayonnaise only to the extent necessary to moisten the mixture
Chill in the refrigerator until semi-frozen
Fill the cold tomato shells
Garnish with additional mayonnaise and a sprig of chives.
