250g of fresh shrimp, cleaned and chopped

6 to 8 almonds, finely chopped
1 tablespoon of green onion, finely chopped
1 tablespoon of grated ginger
2 tablespoons of cornstarch
1 tablespoon of wine or sherry
Salt and black pepper to taste
1 egg, beaten
4 white bread slices for sandwich, without crust

Combine the shrimp, ham, almonds, green onion, ginger, cornstarch, wine or sherry, salt, black pepper, and egg
Spread this mixture evenly on one side of the bread slices
Cut into 4 triangles and fry with the shrimp facing down until golden brown
Flip and let it cook for another minute
Remove to a paper towel-lined plate and serve immediately, or fry ahead of time and reheat in a moderate oven (170°) for about 15 minutes.
