1 recipe for baked tart crust (see recipe below)
1 tablespoon of unflavored gelatin, dissolved
1/4 cup of water
1 1/2 cups of milk
2 beaten eggs
1 pinch of salt
1/2 cup of sugar
1 1/2 teaspoons of vanilla extract
1 1/2 cups of grapefruit, caramelized and drained

1 1/2 cups of grapefruit, caramelized and drained
Prepare the tart crust
Soak the gelatin in water and reserve
Heat the milk in a saucepan over low heat with warm water
Cook until it thickens and coats the back of a spoon
Beat the eggs with salt
Gradually pour the hot milk into the egg mixture, whisking well
Add the sugar and vanilla extract, mixing well
Pour again into the saucepan and cook over low heat with warm water until it thickens and coats the back of a spoon
Remove from heat, add the dissolved gelatin, stirring well until completely dissolved
Let cool to room temperature
Reserve some grapefruit slices for garnish and cut the remaining grapes in wedges
Add the grape slices to the cream and place on top of baked tart crust
Garnish with reserved grapefruit slices
Refrigerate for at least 3 hours.
