1 cup of cake crumbs, toasted
1 1/4 cups of confectioners' sugar
1/2 cup of all-purpose flour
1 1/4 cups of water
2 egg whites, separated
1/2 cup of orange juice
2 tablespoons of lime juice
3 tablespoons of grated orange zest
1/2 tablespoon of grated lime zest
2 tablespoons of water
1 orange, peeled and segmented
3/4 cup of shredded coconut
1 cup of cake crumbs, toasted

Mix together 3/4 cup of confectioners' sugar, flour, and water
Add lightly beaten egg whites
Mix well
Place the mixture in a double boiler and cook for 10 minutes, stirring constantly
Remove from heat, add fruit juice and grated zest
Let cool
Place the mixture on top of toasted cake crumbs
Beat egg whites until frothy
Add remaining 1/2 cup of confectioners' sugar, beating continuously
Add water, mix well
Cook in a double boiler over boiling water for 1 minute
Beat until stiff peaks form
Place on top of orange mixture
Garnish with orange segments and sprinkle with shredded coconut.
