To prepare the crust: Grind the biscuits in a blender, 6 at a time
While doing so, melt the butter in a bain-marie
Add the melted butter to the ground biscuits, then add the whiskey and lemon rind
Mix well with your hands, forming a uniform crumb
Place this mixture into a round cake pan that can be opened
Press it evenly onto the bottom and edges of the pan
Preheat the oven to 200°C

Pour this mixture over the crust
Let it set for 1 hour
Beat the egg whites until frothy and gradually add sugar to the desired meringue point
Use a spoon to cover the filling completely with the meringue
Bake in the oven for 10 minutes
Let it cool slightly before refrigerating for 1 hour.
