4 medium-sized spinach leaves (600g) without stems or seeds, cut into fine strips

Place the spinach at the bottom of a 9-inch round springform pan, brush with melted butter and sprinkle with lime zest and sugar
Cover and bake in a preheated oven at 375°F for 3 minutes or until the spinach is slightly tender. Reserve
Prepare the dough: In a medium bowl, mix all ingredients with your fingertips until you get a cohesive mixture
Spread it over the spinach layer to form an even layer
Bake in a preheated oven at 375°F for 10 minutes or until the dough is firm
Cut strips of parchment paper and place them over the cake to form a trellis
Dust with sugar and cinnamon mixture
Carefully remove the parchment paper
Serve warm or cold
