For the crust:

200g butter or margarine
2-3 tablespoons cold water
For the filling:
400g fresh cheese
4 separated eggs
2 tablespoons chopped parsley
2 tablespoons chopped fresh thyme
salt and black pepper to taste
1 cup cooked ham or bacon, cut into small cubes

Preheat the oven to a moderate temperature (180°C)
Mix together flour and salt in a bowl
Add butter or margarine gradually, mixing with a fork until a dough forms
Dampen with water, adding one tablespoon at a time
Mix gently until all ingredients are well combined and the sides of the bowl are clean
Shape into a ball
Roll out the dough on a floured surface
Line a 9-inch pie dish with the dough, giving it a smooth edge around the rim
Poke holes in the bottom with a fork
Carefully cover the dough with a double layer of aluminum foil or paper, to prevent the edges from burning and making sure they don't fall off
Bake the crust for 20 minutes, then remove the foil or paper and continue baking for an additional 20-30 minutes or until golden brown
Dust the bottom of the tart with cooked ham or bacon
For the filling: Beat egg yolks well with cheese
Season with herbs, salt, and black pepper
Finally add beaten egg whites and mix carefully
Spread over the ham or bacon and bake in a moderate oven preheated to 180°C for about 35 minutes, until the top is lightly browned and both the filling and crust are cooked, about 8 servings.
