For the cream
3 egg yolks
2 tablespoons of sugar
1/4 cup of milk (60 ml)
1/4 cup of cold butter, cut into small pieces (50 g)
1 tablespoon of Amaretto liqueur
For the dough
1 1/2 cups of all-purpose flour (180 g)
2 tablespoons of sugar
1/3 cup of almond meal, finely ground in a food processor (65 g)
1/4 cup of cold butter, cut into small pieces (50 g)

1/3 cup of strawberry gelée (100 g)
1/4 cup of milk (60 ml)
2 cups of small strawberries (250 g)

Make the cream: in a medium saucepan, whisk together the egg yolks, sugar, and milk
Cook over medium heat, stirring constantly with a wooden spoon until thickened
Transfer to a bowl and add the cold butter, whisking until melted and smooth
Add the liqueur, whisk well, and refrigerate for 45 minutes. Reserve
Preheat the oven to 350°F (180°C)
Make the dough: on a flat surface, combine the flour, sugar, and almond meal
Make a depression in the center and add the cold butter, mixing with your fingers until crumbly
Make another depression in the center and add the egg yolks
Mix with your hands, adding milk as needed until smooth
Shape into small tartlets and fill with the cream
Bake for 25 minutes or until lightly golden
Let cool before serving
Refrigerate if not using immediately
Make the glaze: strain the gelée over a medium saucepan, add milk, and cook over medium heat, stirring constantly until thickened (about 5 minutes)
Cool to room temperature
Wash and dry the strawberries
Cut into thin slices
Distribute 1 tablespoon of cream among the dough tartlets, top with strawberry slices arranged in a star shape, and drizzle with glaze
Serve immediately
