Mix the flour and salt
Mix the olive oil and warm water and slowly pour over the flour, beating well
This can be done in a processor or blender
Add the pieces, shape into a flat ball, wrap in transparent plastic wrap, and reserve
Mix the chopped coriander, cumari peppers, and green onions
Add the grated cheese and eggs
Beat in a blender or processor
Scoop tablespoon-sized balls of dough onto a lightly floured surface to obtain 10 cm circles
Place 1 tablespoon of filling in the center and lift all the points to form a fritter, pressing well to seal
Place the fritters on a baking sheet lined with parchment paper and cover with a clean cloth
At this point, the fritters can be frozen for up to 1 month and fried
Heat enough oil to have a depth of about 7 cm
Fry the fritters, some at a time until they are golden, about 2 minutes per frying
Drain on paper towels
Use strips of green onion, passed in warm water, to tie up the fritters.
