Wash the trout well and cut it into fillets
Season with salt, black pepper, and finely chopped magenta pepper
Coat each fillet in flour and remove excess
Fry the fillets in hot oil
Remove the fillets to a dish and reserve
Drain all the oil from the frying pan, leaving about 2-3 tablespoons, where the prosciutto should be browned
Once the onion is golden, add vinegar and cover with a lid
Turn off the heat
Serve this dish best cold and accompanied by boiled potatoes.
