Cook the sweet potatoes until they are tender, but still firm
Peel them carefully and cut into slices
Set aside
Combine the sugar, water, and vinegar in a small saucepan and stir until the sugar dissolves
Bring to a boil and let simmer until it reaches a sticky consistency
Dip the slices into this caramel mixture and place on a greased surface
Serve with salads or roasted meats, if desired
