Cook the beetroot with its skin
Peel and season the beetroot with salt, olive oil, and vinegar
If desired, add some whole cloves to the dressing
When serving, drain the beetroot and place it on a platter, having mayonnaise dressing in the center
Garnish with parsley stalks.
