Peel the eggplant and cook it in a steamer
Blend it with butter, egg yolk, and black pepper
Mix well, adding all-purpose flour gradually, until the dough is just right for shaping
Add more flour if needed. Reserve
Make the filling: cook the beef in water until tender
Drain, let cool, and shred
Heat oil, add the onion and dried beef, and simmer for 3 minutes, then add parsley
Take a small amount of dough and spread some filling on it, roll up as fritters
Dip in beaten egg and coat with crumbly bread crumbs, then fry in hot oil until golden.
