Mix the eggs with the sweet potato
Add the onion, flour, salt, baking powder, and melted butter or margarine
Fold in the firm egg whites
Spread the mixture into 5 cm diameter muffin tin liners to 2/3 height
Bake in a hot oven (200°) for 20-25 minutes
Make about 30 fritters.
