In a blender, beat the butter, onion, corn, and egg
Transfer the mixture to a saucepan and season with salt and pepper
Add the flour and scallions and mix well
Heat the mixture over medium heat, stirring constantly until it comes away from the sides of the pan
Let it cool
Shape the dough into balls and fill them with cheese cubes coated in cornstarch
Dip each ball first in whipped egg white and then in cake flour
Place them in a container, cover with plastic wrap, and refrigerate for at least an hour
Heat a frying pan over high heat and fry the fritters until they are golden brown
