Boil the sweet potatoes in a large pot, covered with water and 1 tablespoon of salt, until they are tender, about 25 minutes
Drain the cooked sweet potatoes and reserve 2/3 cup of the cooking water
Peel and mash the sweet potatoes
In a medium saucepan, combine the reserved cooking water and butter or margarine
Heat over medium heat until the water simmers and the butter melts completely
Reduce the heat and whisk in all-purpose flour with a wooden spoon until the mixture forms a ball
Remove from heat and let cool slightly
Beat in the eggs one at a time, then mix in the mashed sweet potatoes and black pepper
Heat about 5 cm of oil in a deep frying pan over medium-high heat
When hot, carefully add the sweet potato mixture to form fritters
Fry for about 8 minutes or until they are golden brown and crispy
Drain on paper towels and keep warm in a low oven
Yield: 45 fritters.
