Take each slice of bread and cut a circle
Make a depression with the spoon in the center of the circle
Place in a moderate oven (170°F) to warm up
When it starts to brown, remove and brush with butter and sprinkle Parmesan cheese
Break an egg into each puff pastry cup
Season with salt
Return to the oven to bake the quiches
As desired, fry the eggs in a pan with non-stick oil that's not too hot and place on top of each bread cup
Serves 20 people.
