Cook the beef in seasoned water with salt, pepper, thyme, and green onions until almost tender
When the beef is nearly tender, add the cleaned and peeled vegetables and cook until they're tender
Remove the beef from the pot
Mash all the vegetables well, then mix with butter or margarine
If the mixture is too thick, add a little milk, but the purée should be thick
Serve with sliced beef, 3 to 4 servings
