In a pressure cooker, cook the beef for about 40 minutes or until tender
Drain the liquid and reserve
In a pan, heat the olive oil, sauté the zucchini cubes and let it cook without breaking down, adding the vegetable broth gradually
Add the beef, the remaining vegetable broth, and the peas cut into pieces
Cook for another 10 minutes and turn off the heat
Sprinkle with scallion and serve with rice
Tip: Salt the beef by leaving it to soak in water for a night in the refrigerator, changing the water several times.
