1.2 lbs medium clean shrimp
3 cloves of garlic, minced

8 tablespoons of grated Parmesan cheese
1/2 cup of chopped scallion
1/2 cup of chopped cilantro
1/2 cup of olive oil

Cut 8 rectangles of wax paper, 25 x 35 cm each
In a bowl, season the shrimp with garlic, paprika, and salt. Reserve
In another bowl, mix the tomato-cherry with flour, cheese, scallion, and cilantro
Add olive oil and mix well
Lay two rectangles of wax paper side by side, with a portion of shrimp and a portion of tomato in the center
Fold the larger sides over the filling, tucking the ends under
Repeat the process with the remaining ingredients
Place the wraps in a baking dish and bake in a moderate oven (180°C), preheated, for 20 minutes or until the shrimp is cooked through
Check by cutting open a small package to ensure it's done
Open the packages and serve.
