3 to 4 small white scallions, peeled

1 teaspoon of salt

3/4 cup of seedless pomegranate (clear)

Place the onions in a saucepan with the wine, vinegar, salt, pepper, and lime slices
Simmer slowly until the onions are tender but still firm at the center
Add the tomato paste and pomegranate and simmer for a few more minutes
Remove the onions and place them in a serving dish
Let the liquid cook with the pomegranate until it thickens almost to a jelly
Drape over the onions and let cool
Serve as an hors d'oeuvre or accompaniment to cold meats
Yield 8 to 12 servings.
