In a medium saucepan, combine the pineapple juice, water, and sugar
Bring to a boil over medium heat, stirring constantly
Simmer, without stirring, for 20 minutes or until the mixture reaches a soft-ball stage
Add the fresh shredded coconut and stir well
Simmer, stirring occasionally, for an additional 15 minutes or until the mixture comes away from the sides of the saucepan
Remove from heat and spoon small portions onto a greased surface
Let cool and carefully remove the cakes from the surface.
