1 1/2 kg of short ribs
all-purpose flour
olive oil
3 tablespoons of all-purpose flour
1 1/2 cups of water
1/4 cup of grated carrot
1/2 cup of tomato puree
1/4 cup of chopped onion
1/4 cup of chopped green scallion
1/2 clove of garlic
salt and pepper to taste
1 1/2 kg of short ribs

Cut the short ribs into individual portions or have your butcher do it for you
Dredge all the pieces in flour
Brown them on all sides with olive oil
Remove the ribs
Add the 3 tablespoons of flour to the pot; gradually add the water
Add the tomato puree, carrot, onion, scallion, garlic, salt, and pepper
Place the short ribs in the pot
Cover and simmer until the meat is tender
Add more water if needed
Serve in 4 portions.
