1 kg of sweet potatoes
2 cups of sugar
1 and 1/2 cups of water

Boil the sweet potatoes in a large pot with enough water to cover them until they're tender, but still firm
Drain, let cool, and peel the sweet potatoes
Cut the sweet potatoes into 2 cm cubes. Reserve
In a medium saucepan, combine the sugar and water and bring to a boil, stirring until the sugar dissolves
Let simmer until the syrup thickens (remove some of the syrup with a spoon: the syrup should thicken slightly)
Add the coconut milk and stir
Add the sweet potatoes and let simmer for 5 minutes
Remove from heat and let cool to room temperature
Serve in 8 portions
