2 cups of pink beans
1/2 cup of olive oil
5 cups of beef or water broth
1/2 cup of butter or margarine
2 tablespoons of lemon juice
1/2 cup of chopped green onion
1/4 teaspoon of orange zest
1/4 teaspoon of dried thyme (optional)
1 tablespoon of thyme

2 cups of pink beans

Wash the beans well and soak them overnight
Drain
Cook in a pressure cooker, with 1 tablespoon of olive oil, beef or water broth
Turn off heat
While the beans are cooking, mix the other ingredients, add salt to taste, and cook over low heat for 5 minutes
Add beans and stir well
Serve 4 portions.
