1 lb of beans
1/2 cup of olive oil
3 chopped onions
5 cloves of garlic, minced
5 sprigs of rosemary
1/2 red pepper, minced
1/2 cup of fresh parsley, chopped
500g of Portuguese sausage (or smoked sausage)
500g of pork ribs
100g of smoked bacon (or regular bacon)
2 cups of cornmeal
6 eggs
Salt to taste
1 lb of beans

Salt to taste
The night before, soak the beans in water
On the day, 5 hours before serving, at least, cook the beans over low heat for 3 hours
When the beans are cooked, heat the olive oil in a pan and caramelize the garlic
Add the bacon, sausage, and pork ribs
Stir well
When all the ingredients are well browned, add the onion and cook for another bit
Then add the cooked beans to this pan
Let it simmer over low heat for 10 more minutes
After 15 minutes, add the eggs to the bean mixture with care so they don't break apart
Add cornmeal gradually, stirring constantly, and cook for a little longer
Add fresh rosemary, salt to taste, and serve.
