1 cup of grated carrots
2 tablespoons of melted butter or margarine
1 cup of cooked and mashed potatoes
2 well-beaten eggs
1 cup of milk
1 tablespoon of vanilla extract
4 teaspoons of active dry yeast
1/2 teaspoon of salt
4 cups of all-purpose flour, sifted (or more if needed)
1 cup of grated carrots

Mix the grated carrots with melted butter or margarine
Add the potatoes, eggs, milk, and vanilla extract
Mix well
Add the yeast, salt, and flour
Mix well and add more flour as needed to achieve a soft but not too compact dough
Dust hands with flour and open the dough onto a floured surface, about 1 cm thick
Cut into slices
Fry 4 or 5 at a time in hot oil
Immediately lift them up to the surface, flip, and fry for another 2 minutes or until they're well cooked
Drain on paper towels
Let cool for about 24 hours
If desired, cut with a toothpick a small hole in the middle of each slice
These 'holes' can also be fried
Serve as is, or dust with grated carrots and cinnamon
