Beat 2 whole eggs and 3 egg yolks with 100g of vanilla bean paste until smooth
Beat until a foamy cream forms
Add the zest and lime juice, mix well, and set aside
Add the yogurt and mix thoroughly
Whip the heavy cream until stiff peaks form and fold in the yogurt cream delicately
Set aside
Beat the remaining 3 egg whites until fluffy and combine with the yogurt cream
Pour into a lined mold and freeze for 4 hours
Unmold and top with chopped fruits spread around the popsicle, and drizzle with raspberry coulis to serve.
